`annotate` sets `undefined` for all not-provided metadata fields.

As stated, calling the annotate API function sets the value of any field that's not provided to undefined. Maybe this is intentional (?), but it's worth considering whether it's the best behavior. FWIW, I expected PATCH semantics.
