Disable explicit documentation tasks when publishing

Goal

The current shared release workflow, automatically runs androidSourcesJar & javadocJar but generating sources and documentation is now already handled automatically by the publish plugin (and androidSourcesJar isn't there anymore).

To unblock the migration, I'm just passing a placeholder task, but later we'll change the release workflow altogether.

Implementation

Pass a placeholder task that does nothing.

Testing

Run a release -> I shouldn't fail
