🐛 Flash: Fix client IP extraction from x-forwarded-for

💡 What: The x-forwarded-for header can contain multiple comma-separated IP addresses when a request goes through proxies. Previously, the raw string or an untrimmed string was being assigned to ip_address in database logs, which can crash database inserts (varchar(45) limit). The fix is to properly parse it using ip.split(',')[0].trim().
🎯 Why: Failing to parse the IP address can result in database insertion errors, dropping the entire log entry, or result in poorly formatted IPs being stored.
📊 Impact: Ensures API logs are always successfully inserted with accurate, correctly formatted IP addresses, preventing potential SQL insertion failures.
✅ Verification: Ran npm run lint and npm run build successfully.
