structureBuild: Improve cleanup when starting to demolish #4020

Avoid dangling pointer issues by cleaning up pFunctionality for factories, repair facilities, and rearm pads when demolishing starts.

(aiUpdateStructure is only called for fully-built structures. Thus, once demolishing starts, the structure stops functioning - and being updated.)
