[Improve][CI] Increase timeout for kafka-connector-it from 120 to 140 minutes

Purpose of this pull request

This PR increases the timeout for kafka-connector-it from 120 to 140 minutes.
The Kafka CI job often takes close to 2 hours to complete, which can cause it to time out and be canceled. Increasing the timeout ensures the job can finish successfully.
