Add Tkinter GUI version of Rock Paper Scissors with History, Leaderboard, and Adaptive AI

Description:

This PR adds a Tkinter-based GUI version of the classic Rock Paper Scissors game.

The following features are included:

• Simple and user-friendly GUI for better user experience.
• Tracks and displays wins, losses, ties, current streak, and win rate.
• Adaptive AI that learns from the player's previous moves.
• Persistent storage of game history and stats via JSON file.
• Leaderboard view to show performance metrics.
• History view for the last 10 matches with timestamps.

Why this change?

Improves the previous CLI version by providing a GUI suitable for kids and casual users.
Adds features that make the game more engaging and informative.
