Since #414 is stuck with no-one to build OSX, we have the unappealing choice of dropping osx-64 & osx-arm64, or coming up with a special queue that doesn't have the 6h timeout (discussion started, but it's going to take time). As a longshot, we might be able to cross-compile from linux. I remember statements that there are still bugs in our infrastructure that prevent this sort of cross-platform compilation, but at least polars is building windows from linux already.

Moved the builds to azure because the open-gpu server is in heavy use right now, and this will likely fail much before the 6h timelimit anyway...
