This converts the legacy Vuepress setup to a relatively vanilla Vitepress app, and updates the link in the repository readme to the newly-deployed 6.x version.
I still owe the team + community an overhaul of the content, but the Vuepress app wasn't building any more, so this felt like the better place to start. 😅
