Update Compatible release track #6666

Follow-up to #6471

  • "Compatible" + "Extended" release tracks are now available in Preview to eligible dbt Cloud customers. Actual availability will be rolling out to those accounts over the course of next week (December 16-20)
  • Add versions + changelogs for first "Compatible" release (December 12, 2024)

After a bit more reflection / internal conversation - I'm going to revert this change and republish early next week, once the vast majority of customers have access in their instances.

@mirnawong1 Thank you so much for the quick work to make this happen! We'll do the same thing again in a few days :)

Reverts #6666

Delay publishing Compatible release track updates until next week, when
it will be available for the vast majority of customers, to avoid any
confusion about "Preview" in the meantime.
