feat: Update README with expanded site support and project details

- Greatly expand and update list of supported sites
- Reorganize "Built With" section:
  - Add Node.js, remove HTML/CSS/JS
  - Separate libraries used in WebToEpub from build process
  - Update library versions (JSZip to v3.7.1)
- Update links to point to GitHub wiki for parser creation and FAQ
- Remove specific contributor count
- Minor text adjustments and improvements throughout
