Due to an upcoming major release of pyfdb that will bring breaking changes, we constrain pyfdb for the moment so existing usages through earthkit-data aren't affected.

Description
Because a major pyfdb release with breaking changes is coming soon, we are temporarily pinning pyfdb so that current earthkit-data usage continues to work without issues.
