This doesn't really affect anything as we don't have these packages anymore, so this is just more of cleanup

This PR removes obsolete package removal commands from the ISO configuration script. The removed lines attempted to uninstall ublue-brew and ublue-motd packages, which according to the PR description no longer exist in the system.
