What this PR does / why we need it:

PR #766 recorded the vLLM-Ascend encoder-prefill-decode row as measured (spec tasks T18 and T20), but two pages still called it unverified. This updates them to match the spec:

• epd.md: the llm-d-router + vLLM + Ascend row reads "Verified on Ascend 910B2", and the todo: verify the unrun EPD rows: AMD ROCm, SGLang on Ascend, failure conditions #763 pointer names the rows still unrun (AMD ROCm and SGLang on Ascend).
• engine-versions.md: the vLLM-Ascend EPD row reads verified, and the sentence under the table no longer lumps Ascend with the unverified rows.

The evidence is the spec's, not a new run: two-node 910B2, vllm-ascend 0.30.0rc1 behind llm-d-router, Qwen2.5-VL-7B-Instruct, case-121.sh 15 of 15 twice, multimodal probe 200 through the router Service.

Special notes for your reviewer:

• Issue todo: verify the unrun EPD rows: AMD ROCm, SGLang on Ascend, failure conditions #763 was realigned in the same pass: its closing criteria already list these docs, and it now tracks only the unrun rows.
