Refactor evohome tests for future tests

Proposed change

This PR tidies up existing tests, in preparation for a additional tests (e.g. of service calls).

It renames symbols, improves fixtures and setup/teardown.

I am planning significant changes to this integrations (e.g. adding config flow). The goal here is to have sufficient testing in place before submitting those PRs.

It would be great to have this PR merged, so that I can merge #126124.
