Initial work to add some basic tracking for various actions via PostHog.

Adds a required prompt before tracking anything:

@odagayev could you check out the trackEvent calls here? These are what we see in Posthog.
Also if you could look into what we need to do for user consent that would be awesome. We'll need another update to the README at least, and possibly reconsider whether we want to send over the user's full filepath (i.e. on the openFile event).
