Thanks @amanmajid - super helpful to drop the various unused scripts and update instructions. Please rebase to drop the demo data commits from this branch before merging. Can you create a toy example instead? |

This PR cleans up the JEM repo significantly to remove outdated and/or unnecessary files. This should make it easier for new users to get started.
