WIP: Refactor to plugin-based architecture, remove legacy pkg/ infrastructure

Migrate accessTokens, registryCredentials, and registrys from monolithic
pkg/ layout to self-contained plugin modules. Remove dinosaur example
entity, legacy server/auth/config/db/controller infrastructure, clone
docs, and test support files. Simplify generator and templates for the
new plugin pattern.
