Vite v8 is stable now, and since we are using the beta version already it makes sense to bump to stable

^8.0.0-beta.12to^8.0.0stable in package.json and apps/web/package.json. Also updates vite.config.ts to use a default JSON import (pkg) instead of a namedversionimport, required by the stable release.Macroscope summarized 3b2aef2.
