docs(contract-client): clean api, write a book

Yes, a whole book about AssembledTransaction. It needed documentation;
why not make it useful.

This also removes an obsolute method, marks a couple as private,
adds detail to other comments, fixes the `fee` type, updates
SentTransaction docs, and organizes the code a bit.
